Ham & Cheese Stuffed Mushrooms

A simple and delicious Christmas starter

Serves 8

Preparation Time: 10 min

Cooking time: 30 min

Carbs per serving: 3 gram

Ingredients

  • 16 large white mushrooms
  • 170 grams cream cheese softened
  • 3 cups shredded cheese 
  • 3 cups chopped sliced deli ham
  • 2 tsp garlic salt

 

Method

  • Preheat oven to 200C
  • Remove stems from mushrooms and discard or save for another use. Stir together all the other ingredients. Divide between the mushrooms.
  • Bake for 30 minutes or until mushrooms are softened and the filling is golden.

 

 

 

Salmon Roasted in Garlic Butter

Something a bit different but super tasty!

Serves 8

Preparation Time: 5 min

Cooking time: 15 min

Carbs per serving: 0.2 grams

 Ingredients

  • 1/2 cup unsalted butter
  • 8 x skin-on salmon fillets (around 150 grams each) 
  • Salt and freshly ground black pepper
  • 2 tsp chopped fresh garlic
  • 1 Lemon cut in to thin slices


Method

  • Preheat oven to 250C. 
  • Place butter and garlic in small roasting dish. Place in oven and heat until butter has melted, about 4 - 5 minutes.
  • Remove pan from oven and place fillets skin-side up. Return to oven and roast 4 minutes. 
  • Remove from oven and pull skin from salmon (if the skin doesn't pull away roast another 1 - 2 minutes). 
  • Season the now skinless side with salt and pepper and add some and add some thin slices of lemon on top. 

 


Feta, Tomato and Capsicum Salad

A fresh and easy summer greek salad with a zingy red wine vinaigrette dressing

Serves: 8

Preparation Time: 10 min

Carbs per serving: 6 grams

Ingredients

  • 10 cups shredded lettuce (approx 750 grams)
  • 5 Tomatoes
  • 2 Yellow Capsicum 
  • 1/2 Red Onion
  • 140g feta cheese 

Dressing:

  • 2/3 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste 

Method

  • Wash and slice the tomatoes and capsicum. Then shred the lettuce and place together in a large bowl.
  • Thinly slice the red onion, adding it to the bowl.
  • Add the dressing ingredients into a jug and mix together. 
  • Add dressing to the salad and mix around so all the vegetables are covered nicely. 
  • Dice the feta and add to the top of the salad.

 

Mini Chocolate Cheesecakes

Impress your friends and family with these delicious low carb mini chocolate cheesecakes

Serves 8

Preparation Time: 10 min

Passive time: 2 hours

Carbs per serving: 9 grams

Ingredients

Base:

  • 240g Ground Walnuts


Filling:

  • 180g Cream Cheese 
  • 120g Heavy Whipping Cream 
  • 200ml Water 
  • 60g Chocolate Atkins Shake Mix 
  • 200 grams of fresh strawberries (approx 2 medium strawberries per serving)

 

Method 

  • Place the walnuts into a food processor and blend on high for 30 seconds. (alternatively chop with a knife until desired texture)
  • Mix together the cream cheese, protein powder, heavy cream and water in a bowl until well combined
  • Find 8 small dessert glasses. Evenly distribute crushed walnuts in to the 8 glasses. 
  • Then add the cream cheese mixture over the top of the crushed walnuts
  • Cover and refrigerate until firm. Garnish with chopped strawberries before serving.
