Muffin in a Minute is a great low carb favourite and so easy to make.

  • 2 tbsp ground flaxseed
  • 1/4 tsp baking powder
  • 1/4 tsp sweetener (optional)
  • 1 tsp cinnamon
  • 1 egg
  • 1 tsp butter or olive oil

Many people find it makes a good substitution if you’re missing bread or you can even add 1 tbsp almond flour to the mixture (after phase one) if you want a more cake-like consistency. Or add 1 tbsp unsweetened cocoa powder for a chocolate muffin! Combine all ingredients well in a mug. Microwave for one minute, allow to cool. Any moistness goes away once cools. Slather with butter or other toppings and enjoy!
