These spicy roasted almonds are addictively delicious!

  • 20g butter
  • 2 tablespoons olive oil
  • 2 cups whole blanched almonds

Spice Mix

  • 2 teaspoons salt
  • 1 teaspoon caster sugar
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon ground cumin
  • pinch cayenne pepper
  • Make spice mix: Combine all ingredients in a bowl. Mix well.
  • Melt butter and oil in a frying pan over medium heat. Add almonds. Cook, stirring, for 5 minutes or until lightly browned. Remove from heat.
  • Drain excess oil. Add spice mix and toss to coat. Return to heat.
  • Cook, stirring often, for 2 minutes or until golden. Spread on a tray to cool slightly. Serve warm or cold.
