These yummy zucchini pizza bites are a healthy, low-carb option for party snacking and weeknight meals.

  • 1 each Zucchini, Large (323g each)
  • 1/2 cup Low Sugar Pasta Sauce
  • 1/2 teaspoon Italian Seasoning
  • 3/4 cup Mozzarella cheese, shredded
  • 2 tomatoes (finely sliced)
  1. Preheat oven to 180°C, prepare a tray with baking paper.
  2. Slice zucchini into slices and place in a single layer on the prepared baking tray.
  3. Top each zucchini slice with ½ teaspoon pasta sauce and a sprinkle of Italian seasoning.
  4. Place a tomato slice on top of the zucchini with a sprinkling of cheese.
  5. Bake zucchini bites for 8-10 minutes, until cheese is fully melted and zucchini slices are tender. This recipe is assuming you start with 24 zucchini slices and 6 pizza bites is one serving.
