A simple and delicious chocolate protein pudding recipe. This delicious recipe was perfectly created by Megan Ellam from Mad Creations.
Carbs per serving:
1 ½ cups (375g) thickened or heavy cream, divided - see method
2 teaspoons vanilla extract
50g sugar-free keto chocolate
1 scoop Atkins Chocolate Protein Shake Mix
3 tablespoons (30g) powdered sweetener
2 teaspoons gelatin powder
6 egg yolks
1. Add 1 cup of cream, vanilla, and chocolate to a small saucepan. Whisk over medium heat until it reaches a low simmer. Remove from heat.
2. In a separate bowl whisk together protein powder, sweetener, gelatin, and egg yolks. Pour half of warmed cream into eggs and whisk to combine then pour back into remaining cream in saucepan. Cook whisking over heat until custard thickens and coats the back of a spoon. Remove from heat and allow to cool at room temperature for 10 minutes. Cover and chill for 1-2 hours until soft set.
3. Place remaining cream into a large mixing bowl and whip until stiff peaks form. Set aside.
4. Whisk chilled custard to loosen it a little. Whisk in half whipped cream. Fold remaining cream gently through.
