Low carb and gluten-free fluffy bread substitute. These little breads are easy to pop into your bag when going to work, or great to eat at lunch.
Preheat oven to 300 degrees. Separate the eggs very carefully, there must be no yolk in the white.
In one bowl, mix together the egg yolks, Cream Cheese and sweetener.
In the other bowl add Cream of Tartar to the whites and beat the whites on high speed until they are fluffy and form nice peaks.
Very carefully fold the egg yolk mixture into the egg whites until mixed, but try and not break down the fluffiness of the egg whites too much.Grease a baking tray and, using a large scoop, scoop the mixture into 10 even rounds about 5 inches wide.
Bake on the middle rack for about 30 minutes, keeping a close eye on the bread. Bake until golden brown then allow to cool.
While warm they are crumbly and similar to cooked meringue so ensure you allow them to cool completely and their consistency will be more bread like.
Mushroom and onion burger, great for the weekend and low in carbs. Must try!
