These low carb snow balls are a real treat! Enjoy them just as a little snack or with a hot cup of tea!

Ingredients
  • 1/2 cup desiccated coconut plus extra for topping
  • 1 scoop of Atkins Vanilla Shake Mix
  • 200g Atkins Caramelised White Chocolate, melted
  • 2 tbsp sugar free maple syrup
  • 1 cup of frozen raspberries
Method
  • In a blender blitz the coconut, raspberries, Atkin Shake Mix and maple syrup
  • If the mixture is too wet, slowly add a little more desiccated coconut. Leave the mixture for 10-20 minutes (this will help to keep the mixture stick together)
  • Shape the mixture into balls and arrange them on a baking tray covered with baking paper. Pop in freezer for 10-15 min.
  • Melt the Atkins Chocolate in the microwave.
  • Dip each ball into melted Atkins Chocolate and coat with desiccated coconut.
  • Refrigerate until set. Store in fridge for up to 5 days.
