Ingredients
1/2 cup desiccated coconut plus extra for topping
1 scoop of Atkins Vanilla Shake Mix
200g Atkins Caramelised White Chocolate, melted
2 tbsp sugar free maple syrup
1 cup of frozen raspberries

Method
In a blender blitz the coconut, raspberries, Atkin Shake Mix and maple syrup
If the mixture is too wet, slowly add a little more desiccated coconut. Leave the mixture for 10-20 minutes (this will help to keep the mixture stick together)
Shape the mixture into balls and arrange them on a baking tray covered with baking paper. Pop in freezer for 10-15 min.
Melt the Atkins Chocolate in the microwave.
Dip each ball into melted Atkins Chocolate and coat with desiccated coconut.
Refrigerate until set. Store in fridge for up to 5 days.
