Ingredients
  • 150 gram chicken breast (diced)
  • 60ml chicken stock
  • ¼ onion (diced)
  • 1 teaspoon ground ginger
  • 1 clove(s) garlic (minced)
  • 2 tablespoon olive oil
  • 1 teaspoon spice turmeric ground
  • 2 teaspoon curry powder
  • 1 teaspoon chilli powder
  • 100 gram tinned diced tomatoes
  • 1/2 tablespoon tomato puree
  • 1 tablespoon fresh coriander (garnish)
  • 1 teaspoon garam masala
  • 80 gram cauliflower
Method

Add the chopped onion and olive oil to a frying pan and cook for several minutes until softened. Make a paste of the ground ginger, garlic, curry powder, turmeric powder, chilli powder, with a little water. Add to saucepan and stir in well and fry for a couple of minutes. Add the diced chicken and stir well, add the tinned diced tomatoes.

Add the tomato puree in a jug with the chicken stock and pour into the pan and mix well then simmer for 20 minutes, stirring occasionally. Finally sprinkle in the Garam masala and stir in well for the final 2 minutes of cooking. Garnish with the roughly chopped coriander leaves and serve over the cauliflower rice
