Turn eggplant into lovely small pizzas! This eggplant pizza is low in carbs and makes a lovely dinner.

Ingredients
  • 200 g. eggplant
  • 100 ml unsweetened tomato sauce
  • 100 g. mozzarella cheese
  • 10 cherry tomatoes
  • 200 g. spinach
  • 0.50 tsp salt
  • 1 tsp crushed red pepper flakes
Preparations:

Preheat your oven to 425F. Slice the eggplant into thick slices and arrange in a baking tray. Sprinkle the salt over the slices and bake for 15-20 minutes.

Remove the baked eggplant from the oven and turn your grill on. Spread 1 tablespoon of tomato sauce over each round followed by one slice of mozzarella. Arrange some fresh spinach and cherry tomatoes over the cheese and grill for 3-5 minutes. Make sure you keep a close look while the eggplant is under the broiler as they can burn really fast.
