Delicious as a starter, side dish or main served with salad

  • 8 mushrooms
  • 1 tbsp olive oil
  • salt & pepper
  • 100g goat's cheese
  • 3 tbsp almond flour


Preheat the oven to 175c. In a bowl, toss the mushrooms with 3 tablespoons of the oil and season with salt and pepper. Transfer the mushrooms to a baking sheet, rounded side up. Top with a piece of goat's cheese in the centre of each mushroom then roll each mushroom into a bowl which contains the almond flour to 'coat' the mushrooms. Bake for 10 minutes and serve
