Heat 1 tbsp oil in a frying pan, slice the halloumi and place in pan and fry for a couple of minutes each side. Make the dressing by adding olive oil, lemon juice, basil and seasoning to a bowl and mixing. Pile the salad leaves on plates with fresh, scatter the cherry tomatoes on top and top with halloumi then drizzle with dressing.
