Ingredients
  • 1 large telegraph cucumber 
  • 1 tablespoon of chopped fresh mint
  • 1 teaspoon of lime juice
  • 115g of diced feta
  • 1 cup diced watermelon
  • 2/3 tablespoon extra virgin olive oil
Method
 
  1. Dice the watermelon, cucumber and feta cheese.  Combine them together  in a medium bowl with 1 tbsp chopped mint. 
  2. Add oil and lime juice, tossing gently to combine and serve right away.
