A simple and tasty option for breakfast or lunch!

  • 4 Rashers of Bacon
  • 1/2 Avocado
  • 4 Cherry Tomatoes
  • 2 slices of Atkins Breadmix Bread (25g per slice)
  • Salt & Pepper


  • Cut each cherry tomato into 3 slices and set aside
  • Mash avocado in a small bowl and set aside
  • Cook bacon in a pan until crispy, pat off excess fat and then cut the rashers in half
  • Toast Atkins Bread in toaster until cooked to your liking
  • Assemble open sandwich by spreading avocado on each slice, then add cherry tomatoes. Add salt and pepper and then add the bacon slices. Enjoy!
