Try this yummy Greek omelette for your next breakfast or brunch!

  • 2 eggs 
  • 1 tablespoon of olive oil
  • 5 black olives (chopped)
  • 30 gram crumbled feta
  • 3 cherry tomatoes (diced)
  • 1/4 cup spinach 
  • Whisk two eggs, set aside.
  • Warm pan on medium-high heat.
  • Add 1/2 Tbsp olive oil and warm, but not to the point of smoking.
  • Add tomatoes, olives and all the spinach. Sauté together until spinach is wilted. 
  • Remove ingredients from pan and transfer to a separate dish.
  • In same pan, warm remaining 1/2 Tbsp olive oil until warm.
  • Add eggs to pan and cook as you would a normal omelette. 
  • Add all cooked ingredients to one side of the omelette.
  • Sprinkle some of the feta inside 
  • Fold omelette and sprinkle rest of feta on top.
  • Serve warm.
