This delicious roasted pumpkin salad with spinach & walnuts is the great salad option when you have moved in to phase 2 of Atkins.

  • 500g Pumpkin (after peeling)
  • 2 Tablespoons Olive Oil
  • Salt and mixed herbs to taste
  • 150g Spinach Leaves
  • 1/2 cup Walnuts pieces (toasted)
  1. Preheat the oven to 200C
  2. Peel and chop the pumpkin into bite sized pieces.
  3. Place the pumpkin into a baking dish, drizzle over the olive oil and add a shake or two of salt and mixed herbs to taste.
  4. Place the pumpkin into the preheated oven for 10 minutes.
  5. Remove from the oven and stir.
  6. Place back into the oven for a further 10 to 15 minutes or until golden and cooked through.
  7. Once the pumpkin has cooked to your liking, remove it from the oven and allow to cool completely.
  8. To assemble your salad, combine the cooled pumpkin, spinach and chopped walnuts together in a large salad bowl and enjoy!
