A fresh summer salad with avocado, cucumber and fresh strawberries.

Ingredients
  • 400g Strawberries, quartered

  • 3 medium avocados, peeled and cut into slices 

  • 1 medium cucumber peeled, sliced lengthways 

  • Teaspoon of Poppyseeds for garnish (optional)

Dressing:

  • ½ cup olive oil

  • 1/4 cup fresh lemon juice 

  • 1 tablespoon white wine vinegar 

  • 1 ½ teaspoons dijon mustard 

  • 1 teaspoon fresh lemon thyme, or thyme

  • ½ teaspoon garlic, minced 

  • ¼ teaspoon salt

  • ⅛ teaspoon pepper

Preparations: 
  • Fan out slices of cucumber and avocado on the bottom of the plate.
  • Put sliced strawberries in the middle.
  • To make dressing, add all ingredients in a blender and combine. Drizzle over the salad just before serving.
  • Sprinkle poppyseeds over top (optional).
