Crunchy and fresh tuna salad wrapped in lettuce leaves - perfect for lunch!

Ingredients
  • 170 grams tuna canned in water
  • 1 medium red capsicum
  • 8 cherry tomatoes
  • 1 tsp ground black pepper
  • 1 wedge lemon
  • 8 iceberg lettuce leaves / cups
  • 2 tbsp dijon mustard
  • 1 tbsp full fat mayonnaise
Preparations:
  • Open and drain your tuna can
  • Chop your capsicum, tomatoes and leave to the side
  • In a bowl, combine your tuna, mayo, mustard and black pepper
  • Add your capsicum, tomatoes and squeeze in lemon juice and stir together
  • Rinse your lettuce and pull out the large pieces (about 8 pieces for 4 people)
  • Spoon in about 1/2 cup of the tuna salad into the lettuce
  • Wrap and enjoy!
