Creamy, mouth-watering Avocado Ice Cream!

Ingredients
  • Two large avocados
  • 3/4 cup Swerve Sweetener
  • 1 cup sour cream
  • 1/2 cup heavy whipping cream
  • 1 1/2 tsp lemon juice
  • pinch of salt
Method
  1. Place your ice cream churning bowl in the freezer the day before to ensure it is properly chilled.
  2. Slice open avocados and remove the pits.
  3. Scoop out the flesh of the avocados and place in a blender along with the remaining ingredients.
  4. Blend on high until smooth (about 90 seconds)
  5. Next, pour mixture into ice cream maker following manufacturer's instructions. Usually about 25- 40 minutes. Ice cream should look like soft serve at this point.
  6. Then, scoop the ice cream into a  freezer-safe container and freeze for at least three hours.
  7. Avocado ice cream usually freezes a bit harder than regular ice cream, so allow some additional time for the ice cream to defrost.
