4 tablespoons of Full fat mayonnaise (1 tablespoon per person for dipping)
1. Into a large bowl, add diced chicken, almond flour, eggs, mozzarella, parmesan, parsley, garlic powder, salt, and pepper. Mix well to combine.
2. Heat oil in a large non-stick pan over medium-low heat. With a large spoon, scoop into the chicken mixture and transfer it to the pan, then slightly flatten to make a fritter. Don’t overcrowd the pan, cook the fritters in batches to ensure even cooking.
3. Fry until golden brown on both sides, about 6-8 minutes. Make sure to cook the chicken fritters at medium-low temp, otherwise, they will burn on the outside and won’t get well cooked in the inside.
