This Dijon Chicken recipe is the perfect low carb dinner for busy weeknights

  • 1 Tbsp olive oil
  • 4 chicken thighs (diced)
  • ¼ cup chopped onion
  • 1 tsp minced garlic
  • 1 tsp fresh thyme leaves
  • ½ cup chicken stock
  • ¼ cup heavy cream
  • 2 Tbsp Dijon mustard
  • Salt and pepper to taste
  1. Heat the oil in a pan.
  2. Season the chicken thighs with salt and pepper, and place in the pan.
  3. Cook the chicken until browned and cooked through. Set the chicken aside and keep warm.
  4. Remove any excess fat from the pan, then add the onions, garlic, and thyme.
  5. Once the onions have softened, add the chicken stock and let simmer for five minutes.
  6. Add the cream and mustard, then adjust seasoning as necessary.
  7. Pour the sauce over over the chicken.
