  • 6 tablespoons estra virgin olive oil
  • 1/2 teaspoon salt
  • 2 tablespoons sherry vinegar
  • 1 tablespoon chopped shallots
  • 1/4 teaspoon black pepper
  • 1 teaspoon dijon mustard
Serve this dressing over spinach, watercress or other dark leafy greens.  Each serving is 2 tablespoons.
  1. Combine vinegar, diced shallot, mustard, salt and pepper in a small bowl. Add oil in a slow, steady stream, whisking until dressing thickens.
  2. Use immediately or refrigerate in an airtight container for up to 2 days.
