Ingredients
  • 100 gram almond flour
  • 100 gram Atkins Crunchy Muesli in the blender
  • 80 gram butter
  • 7 tablespoons sweetener
  • 600 gram creamcheese
  • 3 tablespoons full fat cottage cheese
  • red pigment
  • 3 eggs
  • 2 teaspoons vanilla aroma
  • 1 tablespoon lemon juice
  • 150 gram raspberries
  • salt to your liking

Surprise your valentine with this homemade cheesecake. By almond flour and Atkins Crunch Muesli for the crust, this cheesecake will have a crunchy and delicious low carb crust. The perfect suprise for the day of love!

Method

  • Preheat the oven for 175 degrees. 
  • Melt the butter and mix this with the almond flour, the Crunchy Muesli, 1 teaspoon vanilla aroma and a pinch of salt.
  • Spread the dough across the bottom of the cake pan.
  • Bake the cake crust for 10 minutes and let it cool.
  • Mix the butter and the cottage cheese. Add a drip of red pigment and 2 spoons of sweetener to the mixture with a mixer.
  • Add the eggs one by one.
  • Add the lemon juice, the rest of the sweetener and a teaspoon of vanilla aroma to the mixture.
  • Spread the filling across the bottom and bake the cheesecake for 50 minutes.
  • Let the cake cool off in the refrigerator vor about 3 hours.
  • Make a rapsberry sauce by heating the raspberries and crush the raspberries with a blender.
  • After the cake has cooled off, cut the cake in pieces and poor the raspberry sauce on top of the cake. 
  • Enjoy!
