There is so much to love about this stuffed chicken breasts... so simple and delicious!
Carbs per serving:
2 chicken breasts (about 150g each), skinless
1 medium tomato, thinly sliced
½ cup fresh basil
¼ cup freshly grated mozzarella cheese
Preheat oven to 180ºC. Slit each chicken breast horizontally to make a pocket.
Stuff pockets with tomato slices, basil and mozzarella. Secure pockets with small wooden cocktail sticks.
Heat a little oil spray in a non-stick frying pan. Place each breast in pan to brown for 2 minutes on each side. Remove breasts and place in a baking dish. Bake for 15 minutes or until juices run clear.
